Operating Mechanism (Saponification)

The wet chemical agent is a specially formulated potassium-based solution. When sprayed onto the hot cooking fat or oil, it reacts chemically to form a soapy foam layer on top of the oil (saponification). This foam blankets the oil, cuts off the oxygen supply, and cools the cooking oil below its flashpoint, permanently preventing re-ignition.
