Constructed using food-grade Stainless Steel cylinders, robust solenoid-controlled valves, high-temp linear heat sensing cables, and specialized SS distribution nozzles.
The wet chemical agent is a specially formulated potassium-based solution. When sprayed onto the hot cooking fat or oil, it reacts chemically to form a soapy foam layer on top of the oil (saponification). This foam blankets the oil, cuts off the oxygen supply, and cools the cooking oil below its flashpoint, permanently preventing re-ignition.
Wet chemical systems are required in modern commercial cookhouses to protect fryers, range tops, griddles, woks, and the exhaust hood/plenum ductwork.
